Black Bean and Avocado Soup


Princess Two surprised us the other night when we were all busy with different events by making dinner for us. We arrived home and she had it hot and ready waiting on the table. 

It wasn't something we have had before but it was similar to something she had before and so she just added a few things and it was a hit. The girls were sad that she didn't make more as they wanted seconds. 

Black Bean and Avocado Soup
1 T. crushed garlic

1 t. crushed red pepper sauce
1 can black beans undrained
2 chicken bullion cubes
1 medium onion chopped
1 avocado sliced
olive oil

Saute the onion, garlic, crushed red pepper and the bullion cubes in a soup pan with 3 teaspoons olive oil. When the onion is soft and the bullion is dissolved, add three cups water and bring it to a boil. Add the black beans. If you want more beans, you can add as much as you desire. Once it is hot, it is ready to eat. 

Take your sliced up avocado and put some in the soup right before you eat it. It gives the soup a creamy texture almost like cream. Those natural fats are healthy for you.
